Ingredients
2 cups cooked chickpeas, well drained
1 cup cooked quinoa, cooled
1 cup fava beans, blanched, shocked, and peeled
2 cups picked herbs (parsley, cilantro, oregano)
2 garlic cloves, smashed
2 tablespoons scallions, sliced
2 tablespoons ground coriander
1 tablespoon cumin
1 tablespoon sumac
1 tablespoon black pepper
1 teaspoon kosher salt
2 tablespoons all-purpose flour, plus more for dusting
